Ingredients
  

  • 2 cups water.
  • 1 tbsp dried butterfly pea flowers.
  • ¼ cup cup fresh lemon juice.
  • 2-3 tbsp honey or maple syrup, to taste.
  • ¼ cup blueberries.
  • 4-5 mint leaves.
  • 3-4 thin cucumber slices.
  • Ice cubes.
  • Garnish: Lemon wheel, mint, blueberries, edible butterfly pea flowers.

Instructions
 

  • Make: blue tea: Boil 1 cup water. Add butterfly pea flowers and steep 5 min. Strain. You’ll get deep blue tea. Let it cool.
  • Mix: In a pitcher add the blue tea, remaining 1 cup cold water, lemon juice, and honey. Stir. The color will get brighter.
  • Infuse: Add blueberries, mint, and cucumber.
  • Chill 15 min for more flavor.
  • Serve: Pour over ice in a clear glass. Garnish with lemon, mint, and blueberries.
  • Magic trick: Squeeze extra lemon on top and watch it turn purple-pink!

  • Antioxidant boost: Butterfly pea is packed with antioxidants.
  • Make it fizzy: Swap 1/2 the water for sparkling water.
  • Make ahead: Store the blue tea in fridge for 3 days.
