- 2 cups water.
- 1 tbsp dried butterfly pea flowers.
- ¼ cup cup fresh lemon juice.
- 2-3 tbsp honey or maple syrup, to taste.
- ¼ cup blueberries.
- 4-5 mint leaves.
- 3-4 thin cucumber slices.
- Ice cubes.
- Garnish: Lemon wheel, mint, blueberries, edible butterfly pea flowers.
Make: blue tea: Boil 1 cup water. Add butterfly pea flowers and steep 5 min. Strain. You’ll get deep blue tea. Let it cool.
Mix: In a pitcher add the blue tea, remaining 1 cup cold water, lemon juice, and honey. Stir. The color will get brighter.
Infuse: Add blueberries, mint, and cucumber.
Chill 15 min for more flavor.
Serve: Pour over ice in a clear glass. Garnish with lemon, mint, and blueberries.
